ABOUT ME
 

Hi, I'm Susan.  I specialize in helping my clients figure out which foods are making them feel sick and which foods help to reduce inflammation and help them feel their best.  I work with people who want a simple, affordable, and straightforward way to deal with their food sensitivities and improve their health and start feeling good again!  I give my clients the tools they need to discover what foods work best for them in order to optimize the way they feel, look and live their best life. 

I do this using a functional nutrition approach that doesn’t just treat the symptoms of food sensitivities, but actually helps you discover which foods work best for YOU and which foods don’t.  There is NO one size fits all diet.  Once I help you discover your food sensitivities using the MRT Mediator Release Test for food sensitivities, I then recommend the best nutrient-dense foods, supplements, and lifestyle interventions to allow you to thrive!

 I am a Registered Dietitian Nutritionist, Certified LEAP Therapist, Certified Intrinsic Health Coach and diabetes educator. A native of California, I graduated with a BS in Nutrition and Dietetics from Fontbonne University in St. Louis, MO.  After completing my internship with the St. Louis Veterans Administration, I began my career working for the Child Care Food Program, a USDA food program devoted to proper nutrition for children.  Honoring my passion for helping clients with food sensitivities and weight management, I started my own private consulting business counseling clients with a variety of health concerns ranging from food sensitivities to heart disease, diabetes, high blood pressure, and overweight/obesity. 

 

In 2004 I began working with South Denver Cardiology Associates in close association with Dr. Richard Collins, The Cooking Cardiologist.  He and I co-authored a cookbook: Cooking with Heart, that has sold over 5,000 copies. I co-authored a book called The Kardea Gourmet; Smart and Delicious Eating for a Healthy Heart, all about the Mediterranean diet.  I was also an instructor for the University of Colorado Center for Human Nutrition in the Colorado Weigh program, a weight loss program for overweight adults. 

 

    

 

 

 

 

 

 

 

I know what my clients are struggling with.  Growing up in California, I suffered most of my life with debilitating symptoms from food sensitivities and being overweight.  I’ve been on just about every diet out there and am here to tell you – THEY DON’T WORK!!!!    The only thing that does work is changing your lifestyle and making a life-long commitment to healthy living and finding out which foods work best for YOU! 

 

After my second daughter was born I weighed over 200 pounds and decided once and for all to lose the weight for good.  I lost 70 pounds twenty five years ago and have never looked back.  After my weight loss, I went back to school to become a Registered Dietitian Nutritionist and pursue my passion for helping others in achieving their health goals.  I was featured in the August 2004 issue of O Oprah magazine and in the O Oprah Book called, “Live Your Best Life,” in an article on the National Weight Control Registry. 

 

My Philosophy on Food:

Food is one of the great pleasures of life, as is good health.  Enjoy both!

 

My hobbies and activities: 

I enjoy cooking, reading, hiking, cross-country skiing, laughing with my husband and daughters, eating (especially chocolate!) taking long walks with my dogs, going to the movies and traveling.  I also love going to the grocery store and reading Nutrition Facts labels, but so far I haven’t found anyone who will go with me.
